Sweet Potato Casserole and a Pie

Thanksgiving is only a couple weeks away and preparations are starting. My sister called with my cooking detail. I'm making sweet potato casserole like I did last year and I need to make a pie.  The casserole is no problem I looked over a recipe I took out of the Daily News cookbook back in 2001 and added a few twists.  I love to cook. Cooking is a passion of mine. I concoct different meals all the time just by putting together whatever is in the house. Sometimes I look over recipes, but I usually change them.  I  rarely measure and I don't have anything written down. This drives my friend Wanda crazy. She's always calling me for a recipe and I tell her what is in it. She'll ask "Well how much Italian seasoning"? I'll say  "I don't know Wanda like a few shakes"  "Well how much muenster cheese"?   "Like half as much as the mozzarella". This is why I don't bake. Baking is much more precise. You can't just put in a couple shakes of baking powder or guess on sugar. I know. I've tried to bake. You have to follow recipes precisely as they are written. So thankfully I went to The Daily News craft show this year because when I was walking around I came across Pleasant View Orchard and Bakery's display of a caramel apple pecan pie.  So that's what I will be bringing! I put in my order in today. Baking shmaking I'm buying a pie!
