Vegetables and herbs galore

July 20, 2010 - Lisa Reed

Here’s an update to my gardening blog posted back in May. The garden was planted (by Pat, of course) and is growing beautifully. So far we have enjoyed kohlrabi, cabbage, lettuce, green beans, peas, and baby potatoes and onions. I even have my first big zucchini to do something with this week. Last year, I had so many zucchini’s I was giving them away left and right, making baked goods and freezing the summer squash. Anyway, this year we also planted herbs. I have an abundance of basil, dill, mint, rosemary, and parsley. I am now learning what I can do with all of those herbs and the vegetables. I have made pesto, herb butter, and am using fresh herbs and vegetables in practically every meal. In a few weeks I will be in a canning class, so I will learn how to can all the vegetables my hubby is growing. In no time, we will have tons of corn, tomatoes, and peppers. And homemade spaghetti sauce and salsa are calling my name.
