The Filling Station: Owner learns bar business in first year at the helm

FLORENCE Wis. — Although The Filling Station is not a new bar in Florence, it has had a few owners over the past few years.
The latest is Tracy Kattar, who bought the business almost a year ago, in February.
Originally from West Bend, Wis., Kattar now calls the Spread Eagle Chain of Lakes home. Having recently retired after nearly 40 years as a closing agent at a title insurance company, Kattar was looking for something to do with her time and bought The Filling Station “on a whim.”
“I have never not worked in my life. I had the summer off and it was great living on the Chain of Lakes, but then I thought, ‘What am I going to do?’ and then I found out that this place was for sale,” Kattar said.
Kattar did not do much to change the look of the bar but did a lot of mechanical upgrades, including a new furnace and central air conditioning. Kattar also replaced the front door, bought new bar stools and put a new sign out front. She said she hopes to someday replace the bar itself but is happy with the way things are for now.

Having never worked in a bar or restaurant before buying The Filling Station, Katter is enjoying the experience and being a hands-on owner.
The best advice she has for running a bar is to “go with the flow” and not get too stressed out.
Kattar comes in early every morning to clean the business and also works several shifts behind the bar every week. She employs six people — three cooks, three bartenders. Many are holdovers from the previous ownership and Kattar says if not for them, she may not have been able to take on running the bar.
Although busy running his own construction company, Kattar’s husband, Dave, also helps out when and where he can.
Although well known for their old fashioneds and bloody Marys, Kattar considers The Filling Station to be as much a restaurant as it is a bar.
“We have got a really good clientele that comes here to eat but then we also have a really nice bar crowd,” Kattar said. “So they know the kitchen closes at nine, so usually people will come in and eat then they will sit and have a drink or two after.”
Kattar said the clientele has is a nice mix of locals and out-of-towners and people who are just passing through Florence. She noted parking is available across the street for snowmobiles and side-by-sides.
The menu has been a hit, she said, especially the burgers, which are pressed every day with fresh, never-frozen beef.
“I will ask if they have ever eaten here before and if the answer is no, I will ask if they like burgers,” Kattar said. “Once you have a burger, you will never go anywhere else for a burger.”
The Filling Station also features chicken sandwiches, with all sandwiches served with the choice of french fries or homemade chips. Wings, bone in or boneless, are on the menu as well — on Wednesdays a baker’s dozen is only $10.
Fridays feature fish fries with the choice of cod, cod nuggets, perch, walleye and jumbo shrimp.
And on Tuesdays, all rail drinks and domestic beers are $2 and pool is free, she said.
The Filling Station is at 740 Central Ave. in Florence, and opens at 11 a.m. Tuesday through Saturday.
